"Three-Clears Three-Layer Bowl" gets its name from stacking three layers of ingredients in one bowl, and its origin can be traced back to before the Liberation. Life was frugal in the old days, making it difficult to afford lavish meat dishes. Clever villagers would use dried bamboo shoots and vermicelli as the base, topping them with pork liver, which was both presentable and full of flavor.
The dish features dried bamboo shoots at the bottom, a middle layer of sweet potato vermicelli, and a top layer of tender pork liver. First, soak the bamboo shoots and vermicelli in warm water, then cook them separately, and stir-fry the pork liver until cooked. Layer the ingredients in the bowl in order. The finished dish is rich in aroma, with tender, delicious pork liver, crystal-clear vermicelli fully soaked in broth, and mellow, sweet dried bamboo shoots. The three layers provide a rich combination of textures that complement each other, making it a local specialty.
