Baiyu beans, also known as Baijing beans, are a unique local delicacy from Mount Sanqing. They get their name from their milky white color, resembling jade. In ancient times, they were once tribute items for the imperial court and are famously known as the "queen of beans." They are an annual climbing kidney bean that requires strict growth conditions. Mount Sanqing's excellent ecological environment makes it very suitable for cultivation, and they are produced throughout the region. Baiyu beans are rich in nutrients, high-quality plant proteins, various vitamins, minerals, and amino acids. Their texture is soft and delicate yet slightly sweet, with full and plump beans. They can be stewed or stir-fried, making them a traditional local health food.
