They resemble oyster omelets in appearance, with a crispy exterior and tender interior, full of savory flavor, making them a must-try local specialty. The dish uses fresh pig intestines, which are repeatedly rubbed with salt, then cleaned of fat and odor before being boiled and cut into chunky pieces. They are then mixed with sweet potato starch, ginger, minced garlic, cooking wine, and other seasonings into a paste, and slowly pan-fried in hot oil over low heat, turning until both sides are golden.
