On an evening in late autumn and early winter, inside the classroom of the Tourism Night School in Lingtoushan Village, Sanqing Township, a large group of villagers are attending the class in a warm and harmonious atmosphere. Unlike ordinary classrooms, the villagers bring their own rolling pins, basins and bowls, making it hard to tell whether it is the start of a class or a meal. The instructor is Song Lei from Shangrao Vocational and Technical College. The main course today is “Making Colorful Dumplings”. Among the villagers present are entrepreneurs engaged in catering and homestay businesses, as well as residents from various villages under Sanqing Township. They listen attentively to the instructor, eager to show their skills. Under the instructor’s guidance, the villagers roll up their sleeves and strive for perfection in every step, kneading dough, rolling wrappers, preparing fillings, and shaping dumplings. When plates of brightly colored, uniquely shaped dumplings appear, the villagers cannot hide their joy, looking forward to boiling them and tasting the fruits of their own hands.

Song Lei, a lecturer from Shangrao Vocational and Technical College, said: “We meet with the villagers regularly at fixed times and places every week. Recently, we have focused on pastry-making training. We have taught the villagers how to make classic pastries such as egg pancakes, scallion pancakes, hand-rolled noodles, and Chinese flower rolls. Everyone can learn while practicing on site and taste the fruits of their labor. The atmosphere is enthusiastic, and time passes really quickly."

We hope to discover and cultivate a group of high-quality tourism practitioners in our rural area, and create a friendly platform for idle rural labor force to pursue learning and re-employment.
